124. Spaghetti Carbonara
Ok so this is fettucini not spaghetti but that’s what the store had so that’s what I made, I figured it was hardly going to compromise the overall outcome of the dish. I kind of like that carbonara is a bit like having breakfast pasta because of the bacon and the eggs. Toni suggested to me that I should start including a few recipes on here so I figured seeing as I made this myself, and it’s really simple, it would be a good one to start with.
I fried up a pack (12 rashers) of unsmoked streaky bacon, chopped into smallish pieces. While it was frying I boiled 250g of fresh fettucini (or spaghetti, tagliatelle, whatever), and beat 3 eggs into a half pint of single cream. When the bacon was crispy I tossed in the pasta, then removed the pan from the heat before mixing in the eggs and cream. Then I served it, at which point having spaghetti tongs would have been very useful.
