When I first saw this on the list I misread it as chimichangas, and I got real excited because who doesn’t love chimichangas. They’re Mexican food AND fried. Doubly delicious. But alas, it was not to be as I realised rather quickly that it was actually chimichurri. I’ve never made chimichurri before (or eaten it even) so I thought I’d actually follow a recipe for once in my life to make sure I did it properly. I used this one. It was nice and fresh, and tasted good with the steak, but I feel like the flavour would have been much improved if I’d taken the website’s advice and left the sauce 2-3 days before eating it (it was kind of impossible this time as I only found the recipe on the day I wanted it).
